This is my favorite way to make brussel sprouts! The honey-apple vinaigrette adds so much flavor. And, I love the crunchy apple and crispy brussel combination!
Ingredients:
- One 10-12-oz. Package of halved brussel sprouts (you can get whole sprouts and cut them)
- Salt
- Pepper
- Avocado Oil
- 2 tsp. honey dijon mustard
- 1 tsp. raw honey
- 1 tbsp. apple cider vinegar
- 2 tbsp. avocado oil
- 1 tsp. minced garlic
- 1 honey crisp apple
- Fresh parmesan
Directions:
- Line a baking sheet with parchment paper.
- Spread the brussel sprouts onto the baking sheet and coat with avocado oil, salt, and pepper.
- Bake at 400 degrees for 25-30 minutes, or until the brussel sprouts have crispy edges.
- While the brussel sprouts are roasting, whisk together the honey dijon mustard, honey, apple cider vinegar, avocado oil, and minced garlic.
- Let the brussel sprouts cool for 10 minutes, and then drizzle the vinaigrette on top.
- Dice the honey crisp apple and mix it in.
- Sprinkle parmesan cheese on top.
