Vanilla Cupcakes with Strawberry Icing

If you are looking for a foolproof recipe, look no further! These vanilla cupcakes with strawberry icing are one of the easiest, most delicious cupcake recipes of all time. The cupcake recipe has been on my website for almost one year! However, those have blueberry icing. I decided to switch it up a little for Valentine’s Day.

These vanilla cupcakes with strawberry icing are perfectly sweet, dense, and delicious. The original recipe is one of the most popular recipes on my website. I had some extra strawberries that I needed to use and decided to go for it! The icing is so easy to whip together. I love using Simple Mills vanilla icing for the base!

What makes these vanilla cupcakes with strawberry icing healthy?

  • All of the ingredients are extremely clean. These are sweetened with maple syrup and coconut sugar, instead of white sugar. They still taste so sweet!
  • As I said above, I used Simple Mills icing, which is a great option if you are looking for a healthy frosting base!

Overall, I love both icing recipes, but I think my favorite is this one! However, the blueberry is still great!

Cupcake Recipe:

  • 1 1/2 cups almond flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon 
  • 1/4 cup greek yogurt
  • 1/2 stick of butter
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 tbsp. vanilla
  • 2 tbsp. maple syrup

For the Icing:

  • 1 cup of strawberries
  • 3/4 cup vanilla frosting (I use Simple Mill’s, but you can use any brand)
  • 1 tbsp. water
  • 1 tbsp. maple syrup
  • 1/2 tsp. vanilla

Directions:

  1. In a large bowl, whisk the yogurt and butter together. 
  2. Add the coconut sugar and eggs. Stir until well-combined.
  3. Stir in the maple syrup and vanilla.
  4. Add in the baking powder, cinnamon, and almond flour. Stir until everything is well-combined.
  5. Line and grease a muffin tin. Pour the batter in (this will make 9 cupcakes). 
  6. Bake at 325 degrees for 25 minutes, or until a toothpick comes out clean. 
  7. Meanwhile, combine the water, maple syrup, vanilla, and strawberries in a saucepan. Heat on low, stirring often. 
  8. Once the strawberries have broken down (about 12 minutes), transfer to a separate bowl and mix the strawberries with the frosting. 
  9. Frost the cupcakes once they have cooled
