These cookies have the perfect balance of chocolate and cinnamon. They are gluten-free and free of refined sugar (depending on what kind of chocolate chips you decide to use). They are definitely going to be a staple in my holiday baking this year!
Ingredients:
- 1 egg
- 1/4 cup coconut oil
- 1/2 cup coconut sugar
- 2 tsp. pure vanilla extract
- 1/4 cup maple syrup
- 1 cup of almond flour
- 2 tbsp. coconut flour
- 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 cup chocolate chips
Directions:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large bowl, whisk together egg, coconut oil, coconut sugar, vanilla extract, and maple syrup.
- Add the almond flour, coconut flour, baking soda, cinnamon, and salt. Mix well.
- Fold in the chocolate chips.
- Scoop the dough into tablespoon-sized balls and place on the baking sheet. Flatten them slightly with your fingers.
- Bake at 350 for 10-12 minutes.
