Chocolate Chip Snickerdoodles

These cookies have the perfect balance of chocolate and cinnamon. They are gluten-free and free of refined sugar (depending on what kind of chocolate chips you decide to use). They are definitely going to be a staple in my holiday baking this year!

Ingredients:

  • 1 egg
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 2 tsp. pure vanilla extract
  • 1/4 cup maple syrup
  • 1 cup of almond flour
  • 2 tbsp. coconut flour
  • 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips

Directions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together egg, coconut oil, coconut sugar, vanilla extract, and maple syrup.
  3. Add the almond flour, coconut flour, baking soda, cinnamon, and salt. Mix well.
  4. Fold in the chocolate chips.
  5. Scoop the dough into tablespoon-sized balls and place on the baking sheet. Flatten them slightly with your fingers.
  6. Bake at 350 for 10-12 minutes.
