These healthy buckeye balls are a staple in my house around the holidays! I have always loved buckeye balls, but I wanted to make a healthier version. These are gluten free and free of refined sugar (if you use dark chocolate chips). They are also more filling than the traditional buckeye balls, which means I do not eat the entire batch in one day!
What makes these buckeye balls healthier than normal?
- These healthy buckeye balls are sweetened with maple syrup and honey. I love using maple syrup and honey to sweeten things because they are real foods.
- I used a mixture of almond flour and coconut flour to make these bites more filling than the typical buckeye balls.
- Instead of peanut butter, I used almond butter in this recipe. I love getting my almond butter from Costco because the ingredients are so clean!
Ingredients:
Dry:
- ½ cup of Almond Flour
- 2.5 tbsp. Coconut Flour
- 1 tsp. Cinnamon (give it an extra shake if you really like cinnamon!)
Wet:
- ½ cup of Creamy Almond Butter
- 2 tbsp. Honey
- 2 tbsp. Maple Syrup.
Extras:
- 1 cup of chocolate chips of your choice
- 1 tsp. melted coconut oil (this is optional, but it makes the melted chocolate have a better consistency)
Directions:
1. In a large bowl, mix the dry ingredients together. Make sure they are well-combined.
2. In a smaller bowl, mix the wet ingredients together. Make sure they are well-combined.
3. Add the wet ingredients to the dry and stir until they are well-combined. It is important that everything is completely mixed together.
4. Chill the dough for 30 minutes. This step is important. It makes the rolling much easier!
5. While the dough is chilling, melt the chocolate chips and coconut oil together.
6. Once the dough is chilled, roll the dough into balls.
7. Dip them in the melted chocolate. I completely cover mine & fish them out with a spoon.
8. Lay them on parchment paper. You can refrigerate, but you do not have to!
