Healthy Buckeye Balls

These healthy buckeye balls are a staple in my house around the holidays! I have always loved buckeye balls, but I wanted to make a healthier version. These are gluten free and free of refined sugar (if you use dark chocolate chips). They are also more filling than the traditional buckeye balls, which means I do not eat the entire batch in one day!

Ingredients

Dry:

  • 1/2 cup almond flour
  • 2.5 tbsp coconut flour
  • 1 tsp cinnamon

Wet:

  • 1/2 cup creamy almond butter
  • 2 tbsp honey
  • 2 tbsp maple syrup

Other:

  • 1 cup chocolate chips
  • 1 tsp coconut oil, melted

Instructions

  • Add the dry ingredients to a large bowl and stir until well combined.
  • Add the wet ingredients to a medium bowl and stir until well combined.
  • Add the wet ingredients to the dry ingredients and stir until well combined.
  • Chill the dough 30 minutes. This step is important! It makes the dough easier to roll.
  • While the dough is chilling, melted the chocolate chips and coconut oil together.
  • Once the dough has chilled, roll into balls. You should have around 10-12 balls.
  • Dip them in the melted chocolate. I completely cover and fish mine out with a spoon!
  • Lay the finished product on parchment paper. You can enjoy right away or refrigerate to harden.
