Chocolate Peanut Butter Baked Oatmeal

I have never been a huge fan of oatmeal. It certainly is not my go-to breakfast. However, I was very intrigued when I saw the baked oatmeal trend. I decided to give it a try and I was not disappointed! In fact, I ended up eating my first attempt straight out of the pan.

This recipe is so easy and only takes around 5-10 minutes to prep before going in the oven. You can enjoy it as breakfast or a snack. It is the perfect recipe to add to your meal prep (as long as you don’t eat it all right when it comes out of the oven like I did).

I also love that all of the ingredients that go into the baked oatmeal are pretty common, and you’ll probably have them all on hand! This baked oatmeal recipe has the best line-up of flavors! You can taste a hint of banana, but it is not too overpowering. The peanut butter and chocolate chips really steal the show! I mean, who doesn’t love that combination?

Baked Oatmeal

If you are not on the maple syrup train, you should hop on! It is the perfect sweetener and it is not processed like cane sugar. I always get mine from Costco and it is very affordable!

Ingredients:

  • 1 cup oats (uncooked)
  • 2 eggs
  • 1 ripe banana
  • 2 tbsp. peanut butter
  • 2 tbsp. maple syrup
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1/2 cup almond milk (or whatever milk you have on hand!)
  • 1/2 tsp. cinnamon
  • Add in: 1/2 cup chocolate chips

Directions:

  1. Add all of the ingredients, except the chocolate chips, to a blender.
  2. Blend until a smooth batter forms.
  3. Grease a 9×5 baking dish.
  4. Pour the batter in the dish.
  5. Sprinkle the chocolate chips on top (the more the merrier!)
  6. Bake at 350 for 35 minutes.
