I have kept you guys waiting way too long for this stuffed bacon cheddar jalapeño chicken! Whew, that was a mouthful! I really wanted to make sure that this recipe was perfect for y’all, and it finally is. It is one of my favorite chicken dishes ever! And trust me, I have eaten a lot of chicken in my 24 years.
When I was in high school, I use to love going to Sonic to get their jalapeño poppers. I went almost everyday. My friends caught on to my obsession, and one even nicknamed me “jalapeño popper” (I have pictures to prove this). There is just something about a creamy cheese mixture with jalapeños. So good!
I used sour cream in this stuffed bacon cheddar jalapeño chicken, but you could use mayo or greek yogurt. You can actually customize this however you like. You could make a spinach version or a greek version. The options are endless!
Ingredients:
- 2 boneless skinless chicken breasts (approximately 1 -1.5 lbs.)
- 3 medium jalapeños, de-seeded & diced
- 5 slices of bacon, cooked and crumbled
- 1 1/4 cups shredded (or grated) cheddar cheese
- 2 tsp. honey (I get this from Thrive Market)
- 4 tbsp. sour cream
- 1/4 tsp. garlic powder
- 1/2 tsp. onion powder
- Salt
- Black pepper
- 1 tbsp. olive oil
Directions:
- Drizzle the olive oil inside a glass baking dish. Add the chicken.
- Cut a pocket (you are essentially butterflying the chicken breasts) in each breast. Sprinkle with salt and pepper.
- Dice and seed two of the jalapeños. Add them to a skillet over medium heat.
- Add the honey, garlic powder, and onion powder to the skillet, along with a splash of water. Sauté the jalapeños for 5-6 minutes. They should start sizzling.
- In a medium size bowl, combine the crumbled bacon, sour cream, and 1 cup of the shredded cheddar cheese. Stir to combine.
- Stir the jalapeños into the cheese mixture.
- Add half of the cheese mixture to each chicken breast. Fold the chicken breast over.
- Sprinkle with the remaining 1/4 cup of shredded cheese and the other diced jalapeño.
- Bake at 375 for 35 minutes. Cut into the chicken to make sure it is cooked all the way through.
