I absolutely love spring! There is just something about seeing all of the fresh blooms, the longer days, and the holidays! Spring holidays are so underrated, in my opinion. Holidays in my house = lots of good food! I love a good Easter lunch, Mother’s Day brunch, and Memorial Day picnic! This carrot cake with cream cheese icing is the perfect addition to an Easter lunch.
The cake itself is incredibly healthy. The carrots contribute to the moist and fluffy texture and the spices give it that warm and cozy feeling. However, the icing is the true star of the show. There is nothing better than homemade cream cheese icing! It is one of the easiest things to make, and it never fails to dress up a simple recipe. It pairs perfectly with the carrot cake!
Ingredients:
- 2 cups almond flour
- 1/2 cup of coconut flour
- 1/2 cup shredded coconut
- 1 tsp. baking soda
- 1 tbsp. cinnamon
- 2 tsp. pumpkin pie spice
- 4 eggs
- 3/4 cup maple syrup (I get mine at Costco)
- 1/3 cup almond butter
- 1/4 cup milk
- 1 tsp. vanilla
- 1/3 cup coconut oil
- 2.5 cups grated carrots
For the frosting:
- 3 cups powdered sugar
- 8 oz. cream cheese
- 1 stick of butter
- 2 tsp. vanilla
- 1 tbsp. milk
Directions:
- In a large bowl, whisk together the eggs, maple syrup, almond butter, milk, vanilla extract, and coconut oil. You can use a handheld mixer or a whisk!
- Stir in the grated carrots.
- In a medium bowl, whisk the almond flour, coconut flour, shredded coconut, baking soda, cinnamon, and pumpkin pie spice.
- Add the dry ingredients to the wet ingredients and mix until well-combined.
- Heat oven to 350 degrees F. Line the bottom of two 9-inch round cake pans with parchment paper. Spray the parchment paper with nonstick spray.
- Divide the batter between the two pans.
- Bake for 24-28 minutes, or until a toothpick comes out clean.
- While the cake is baking, make the frosting. Using a mixer, add the room temperature butter and cream cheese to a bowl. Whip until well-combined.
- Add the powdered sugar, vanilla extract, and milk. Mix until all the ingredients are well-combined.
- Make sure the cake is completely cool before icing.
