Cajun Shrimp with Lemon Orzo

If you are looking for an easy weeknight dinner, look no further! This cajun shrimp with lemon orzo is a crowd pleaser, and is ready in under 20 minutes! The spiciness of the cajun shrimp pairs perfectly with the lemony orzo. I even like to drizzle some extra lemon juice and butter over the top of mine when serving!

Ingredients

For the Orzo:

  • 1 cup uncooked orzo
  • 1 lemon, juiced
  • 2 tbsp butter

For the Shrimp

  • 1 tbsp butter, halved
  • 1 orange bell pepper, diced
  • 1 lemon, juiced
  • 1 tbsp cajun seasoning (I use Tony's)
  • 1/4 cup milk
  • 1/2 cup parmesan cheese, grated or shredded
  • 1 lb cooked shrimp

Instructions

  • Start by cooking the orzo according to the directions on the package. Drain the water and add the juice of one lemon and 2 tbsp of butter. Stir until the butter is melted. Set aside.
  • While the orzo is cooking, add the diced bell pepper and 1/2 tbsp butter to a skillet. Saute for 7 minutes. Add the juice of one lemon, 1/2 tbsp butter, cajun seasoning, milk, and parmesan cheese to the skillet. Stir until the cheese is melted.
  • Add the already cooked shrimp to the skillet and coat with the creamy cajun mixture. Make sure each shrimp has seasoning on it (you can add more seasoning if you like spicy food). Remove the skillet from the heat.
  • Add some orzo to a plate and then top with the cajun shrimp. Drizzle some of the creamy sauce on top, or top with extra melted butter.
