Ingredients
For the Orzo:
1cupuncooked orzo
1lemon, juiced
2tbspbutter
For the Shrimp
1tbspbutter, halved
1orange bell pepper, diced
1lemon, juiced
1tbspcajun seasoning (I use Tony's)
1/4cupmilk
1/2cupparmesan cheese, grated or shredded
1lbcooked shrimp
Instructions
Start by cooking the orzo according to the directions on the package. Drain the water and add the juice of one lemon and 2 tbsp of butter. Stir until the butter is melted. Set aside.
While the orzo is cooking, add the diced bell pepper and 1/2 tbsp butter to a skillet. Saute for 7 minutes. Add the juice of one lemon, 1/2 tbsp butter, cajun seasoning, milk, and parmesan cheese to the skillet. Stir until the cheese is melted.
Add the already cooked shrimp to the skillet and coat with the creamy cajun mixture. Make sure each shrimp has seasoning on it (you can add more seasoning if you like spicy food). Remove the skillet from the heat.
Add some orzo to a plate and then top with the cajun shrimp. Drizzle some of the creamy sauce on top, or top with extra melted butter.
