Ingredients

  • 3 eggs
  • 1/4 cup coconut oil melted
  • 1 tbsp grass-fed butter
  • 3 tbsp maple syrup
  • 2 tsp cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp baking soda
  • 1/2 cup coconut flour
  • 1 apple, chopped

Instructions

  • In a high speed blender, combine the eggs, coconut oil, butter, maple syrup, applesace, and cinnamon.
  • In a large bowl, combine the coconut flour and baking soda.
  • Add the wet ingredients to the dry ingredients and stir until fully incorporated.
  • Fold in the apple chunks.
  • Spoon the batter, in 1/4 cup measurments, onto a parchment paper lined baking sheet.
  • Bake at 400 degrees for 18-20 minutes.
