I have always loved buckeye balls, but I wanted to make a healthier version. These are gluten free and free of refined sugar (if you use dark chocolate chips). I love using maple syrup and honey to sweeten things because they are real foods. <\/li><li>I used a mixture of almond flour and coconut flour to make these bites more filling than the typical buckeye balls. <\/li><li>Instead of peanut butter, I used almond butter in this recipe. I love getting my almond butter from <a href=\"https:\/\/www.costco.com\/kirkland-signature-creamy-almond-butter%2C-27-oz.product.100333875.html\">Costco<\/a> because the ingredients are so clean!<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients:<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dry:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00bd cup of Almond Flour<\/li><li>2.5 tbsp. Coconut Flour<\/li><li>1 tsp. Cinnamon (give it an extra shake if you really like cinnamon!)<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Wet:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00bd cup of Creamy Almond Butter<\/li><li>2 tbsp. Honey<\/li><li>2 tbsp. Maple Syrup.&nbsp;<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Extras:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup of chocolate chips of your choice<\/li><li>1 tsp. melted coconut oil (this is optional, but it makes the melted chocolate have a better consistency)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions:<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">1. In a large bowl, mix the dry ingredients together. Make sure they are well-combined.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. In a smaller bowl, mix the wet ingredients together. Make sure they are well-combined.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3. Add the wet ingredients to the dry and stir until they are well-combined. It is important that everything is completely mixed together.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4. Chill the dough for 30 minutes. This step is important. It makes the rolling much easier!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. While the dough is chilling, melt the chocolate chips and coconut oil together.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6. Once the dough is chilled, roll the dough into balls.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">7. Dip them in the melted chocolate. I completely cover mine &amp; fish them out with a spoon.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">8. Lay them on parchment paper.
